    DSC_0223Mauritius, officially known as the Republic of Mauritius, is an island nation off the coast of Madagascar located in the Indian Ocean. For anyone planning a vacation to the beautiful island of Mauritius, and understanding of its rich and textured cuisine is essential to discovering new food. Originally, Mauritius was a French holding until 1810 when it was given over to the British at the conclusion of the Napoleonic Wars. It was not until 1968 that Mauritius gained its independence from Britain. Throughout its history, sugar cane production has been the touchstone factor for Chinese, Western, and African influences. As a result, the language and the cuisine of Mauritius bears a strong creole character that is very unique in the world. The language spoken in Mauritius is a combination of Mauritian creole and French, while the written language remains English. Because of the long association and preference for the French style, French cuisine remains an essential part of Mauritian cooking, but it is a very diverse place, and this French is mixed with creole, chinese, indian, and british food staples.
